Jafrani Pulao
Ingredients :
Bhalo basmiti chal-2 cup,
Refined tel-2 tbsp,
Ghee2 tbsp,
ekti baro peyaj slice kare kata,
asto jire 1 tsp,
1 pinch halud,
1/4 cup halka garam dudhe 1 tsp keshar (shafron) bhejano,
jayitri (mace) o jayphal (nutmeg) guro 1/4 chamach kare,
choto elach, labango, darchinir 1 inch stick 4 ti kare,
tejpata-3ti,
kajubadam 12-13 half kare nao,
kismis 2 tbsp,
chini 1 tbsp,
nun taste anujayi,
Process:
Chalta dhuye 10-15 minute moton rekhe jal ta jhariye nao. aar 1/3 tsp halud chal e makhiye shukote dao half an hour moton. eibar ekti korai te tel garam kare prathame kajubadam o pare kismis halka kare bheje tule nao. ebar ghi ta oi tele meshao. garam hale asto garam masla, tejpata o jire phoron dao. gandho berole slice kora peyaj chhere bhajte thako, badami rong dhorle chalta diye bhajte thako. 4 minute moton bhajo, aanch ta medium e rekho. bhaja hale phutonto garam jal dhalo, nun o chini meshao. je dekchite jal ta phut-te debe tate chal ta dhele dao. dudhe meshano keshar diye dhaka dao, aanch ta komiye (slow)dao. 10-12 minute pare dekho chal ta seddha hayechhe kina. aar jal tao soak haye giyechhe, nahole aaro 2-3 minute rakhte paro, ba jal lagle samany garam jal dite paro, dekho besi jal pare gele ghente jabe. namabar age ote jayitri o jayphal mishiye niyo bhalo kare. aar bhaja kajubadam o kismis chhoriye dao opare. serve korar samay mishiye niyo. polao habe jharjhare.
