Dimer Chop

INGREDIENTS:

4 eggs, onions sliced(2 big), chilli powder, oil,Cumin powder,Ginger paste, potato 4 (big), bread crumb


PROCESS: 3 te eggs boil kore niye half kore kete nite hobe. Boiled potato smash kore tate salt diye mix kore nite hobe. Ekta boro vessel e tel gorom kore sliced onion gulo diye golden brown howa obdi bhalo kore fry korte hobe, tale ginger paste, jeera powder, chilli powder add korte bobe, mosala r gondho chorale smashed potato add kore 2 min aaro fry koro. Erpor namiye niye ek ekta dimer piece er opore oi masala ta diye cover kore beaten egg e dip kore bread crumb e roll korte hobe. Then refined oil e kom aaNche e dip fry kore salad / tomato ketchup er sathe serve koro.

Gajorer (Carrot) Halwa - Sweetdish

Ingredients:

Carrot - 450 gms
Milk - 750 gm
Single cream - 150 gm
Granulated sugar - 75 gm
Ghee (clarified butter) 45ml
Khoya (reduced milk) - 45 gm
Ground almonds - 100 gm
Green cardamom - 6 nos
Cashewnuts - 25 gm

Process:

Prothome gajor ke peel kore grate kore nite hobe
Ekta besh boro heavy bottomed pan kom aaNche e ghee diye grated carrot bhejte hobe, er por sugar r cream diye besh nere chere boil korte hobe.
AaNch ta komiye diye khoya, ground almonds, crushed cardamom seeds etc diye aaro kichukhon kom aaNche rakhete hobe.
5-10 aaro rakhte hobe until mixture ta tel chare dey.
Ekta serving bowl e sajiye opore raisins ar cashewnuts sajiye gorom gorom poribeson korte paro.

CHOLE KULCHE


Kulche: Ingredients ::

Maida - 2 cups
Salt - 1 tsp
Baking powder - ½ tsp
Soda - ¼ tsp
Oil or Ghee - 2 tbsp
Warm Milk - ¼ cup
Curds - ¼ cup
Sugar - 1 tsp
Fresh Yeast - 1 tsp

Process:

Prothome Maida, salt, baking powder ar soda mix kore nite hobe. Tale 2 tbsp oil/ ghee o mix korte hobe. Ekta choto bowl e ¼ cup warm milk r ¼ cup curds mix kore tate 1 tsp supar add korte hobe. Ingrdients:

250 -300 gm vindi dhuye dry kare nao. eibar 1 inch mape kete nao. naram dekhe vindi niyo. 2 tbsp sp narkel bata, 1 tbsp peyaj bata, 1/2 tsp rasun bata, 1 ti medium tomato, 4tbsp doi te 1/2 tsp byasan mishiye phetiye nao, oi doi te 1/3 tsp halud, 1/2 tsp lal lanka, 1tsp dhane & 1/2 tsp jire dao . ota doite mishiye 1/2 cup jal meshao. 1/2 tsp badam bata (kaju ba almond), tel pariman moton, nun swad anujayi, 1/2 tsp chini. ek mutho dhanepata. phoroner janye- sarshe, methi, jire, 2 ti shukno lanka, ek chimte hing, 10-12 ti currypata.

Process :
Very simple..... seddho alu ke peyaj kuchi- kacha lonka kuchi - dhone pata diye mekhe frying pan e ektu kalo jeere foron diye nere chere nite hobe. Ebar paurutir modhye pure toast kore nile e Potato Sandwich toiri.
Poribeson er jonno sathe salad / ketchep serve korte paro..

Pav Bhaji


Pao Bhaji ranna korar jonne jaa jaa lagbe:

Pao (Bun Bread)Finely Chopped OnionChopped tomatoesOil/ButterGarlic PastePao Bhaji MasalaDhania powderzeera PowderSaltShelled PeasCauliflower, capsicum, carrot, beans chopped into piecesGreen chilliesCoriander (for garnishing)Lemon juice

Process:

Heat some oil in a pan, add 2 onions finely chopped and fry when the oil heats. Fry till the onions turn translucent. Add the Garlic paste(around 1/2tsp). Add 3 chopped tomatoes, salt, 3 tsp dhania powder, 2tsp jeera powder and 4 tsp pao bhaji powder. Fry well.
Steam the vegetables (cauliflower, carrot, beans) and drain off the water. Add them in the frying pan, along wid peas and capsicum. Cook till the mixture is tender.
Add some water to the mixture and mash well till the consistency gets thick enough. Keep it on the flame for not more than 10 mins.
When all the vegetables are cooked thoroughly, garnish it with coriander leaves and lemon juice. Serve hot
In a separate tawa, heat a little butter and fry the pao's (bread can also be used as a substitute).
Serve the Pao with the Bhaji
Note: Bread Pao na thakle ei bhaji ta ruti/porota diyeo khaoaa jete paare

INGREDIENTS FOR TANDOORI CHIKEN:

chicken: 1, salt to taste, red chilli powder: 1 tsp, lemon juice: 4 tbsp, MARINADE: Tok Doi 6tbsp, ginger paste: 2 ½ tsp, garlic paste: 2 ½ tsp, jeera powder: 1tsp, garam masala powder: 1tsp, kesar: 1tsp
PROCESS: Prothome chicken gulo boro boro piece kore kete niye er moddhe red chilli powder lemon juice r salt diye chicken take 15 min moto marinate kore rakhte hobe. Erpor Doi ta ke 1ta boro bowl e niye valo kore fetiye nite hobe. Er moddhe marination er jonne je je ingredients ache segulo diye valo kore mix kore 1ta smooth marination banate hobe. Ei marination er moddhe ager marinate kora chicken ta diye valo misiye ghonta 4 rekhe dite hobe. Erpor oven ke 350 degree pre-heat kore chicken er piece guloke skewers e gethe oven e cook korte hobe, ontoto pokkhe 10 min. jokhon bujhte parbe chicken cook hoye geche oven off kore ber kore nile e holo tandoori chicken toiri.
MAKKHANI GRAVY:Butter: 250gm, ginger paste: 3tbsp, garlic paste: 3tbsp, 1 kg tomato, salt to taste, 1 tbsp ginger, 8 green chillies, 5 tsp kaju paste, ½ tsp kashmiri degi mirch, 150 ml cream, 1/3 cup coriander
PROCESS: Tomato gulo tukro kore nite hobe. Ginger chop kore nite hobe. Green chilli guloke seeds bad diye chop kore nite hobe. Coriander chop kore nite hobe. Ebare frying pan e butter diye gorom korte hobe. Ebare er modhe ginger garlic paste dite hobe. Olpo ache ektu kose nite hobe ebare oi tomato ta add korte hobe. Nun dite hobe r 500 ml moto jol dite hobe. Dhaka diye olpo ache cook korte hobe jotokkhon na tomato gulo ekdom gole gravyr songe mise jai. Hoye gele ebare strainer e ei gravy take strain kore nite hobe. Gravy tae bare alada kore soriye rakhte hobe. Ebare onno 1ti patrebaki butter diye gorom korte hobe. Ebare er moddhe chopped ginger, chopped green chilli diye olpo narte hobe. Erpor cashewnut paste diye dite hobe. Valo kore koste hobe jotokkhon na colour olpo brown hocche.ebare er moddhe degi mirch dite hobe. Eta dewa hoi jate sundor lal rong hoi khabartar.
